Yiyecek ve i&ccedil;eceklerin &ccedil;o\u011fu birden fazla besin &ouml;gesi i&ccedil;ermekte fakat hi&ccedil;biri hepsini i&ccedil;ermemektedir. V&uuml;cudun gereksinimi olan bu &ouml;geleri yeterli miktarda almak i&ccedil;in her &ouml;\u011f&uuml;nde d&ouml;rt ana besin grubundan &ccedil;e\u015fitli besinleri se&ccedil;erek t&uuml;ketmek gerekir.<\/p>\n<p>Her &ouml;\u011f&uuml;nde almam\u0131z gereken d&ouml;rt temel besin grubundan biri s&uuml;t ve s&uuml;t &uuml;r&uuml;nleridir. Bu gruptaki besinler v&uuml;cudumuz i&ccedil;in gerekli kalsiyum ve vitamin B2&rsquo; nin en iyi kayna\u011f\u0131d\u0131rlar. Kemik sa\u011fl\u0131\u011f\u0131 i&ccedil;in gerekli olan kalsiyum, s&uuml;t grubu besinler t&uuml;ketilmeden sa\u011flanamaz. Bu grup ayr\u0131ca protein, fosfor ile B2 ve B12 vitamininden zengindir.&nbsp;<\/p>\n<p>Ba\u015fta yeti\u015fkin kad\u0131nlar, &ccedil;ocuklar ve gen&ccedil;ler olmak &uuml;zere t&uuml;m ya\u015f gruplar\u0131n\u0131n bu grubu her g&uuml;n t&uuml;ketmesi gerekir. T&uuml;ketilmesi &ouml;nerilen miktar yeti\u015fkinler i&ccedil;in g&uuml;nde 2<br \/>\nporsiyon, &ccedil;ocuk-gen&ccedil;-gebe-emzikli ve post menopoz kad\u0131nlar i&ccedil;in ise g&uuml;nde 3-4 porsiyondur. Bir b&uuml;y&uuml;k su barda\u011f\u0131 s&uuml;t veya yo\u011furt, iki kibrit kutusu b&uuml;y&uuml;kl&uuml;kte peynir, bir k&uuml;&ccedil;&uuml;k kase muhallebi veya s&uuml;tla&ccedil; bir porsiyon kabul edilir.<\/p>\n<p><strong>S&uuml;t proteini iyi kalite bir proteindir.&nbsp;<\/strong><\/p>\n<p>Proteinler, b&uuml;y&uuml;me i&ccedil;in elzemdir. V&uuml;cudun t&uuml;m h&uuml;crelerinin b&uuml;y&uuml;k bir b&ouml;l&uuml;m&uuml; proteinlerden yap\u0131lm\u0131\u015ft\u0131r ve bu h&uuml;creler s&uuml;rekli olarak de\u011fi\u015fip yenilenir. V&uuml;cut proteinlerinin olu\u015fumu i&ccedil;in kaynak, yiyeceklerin i&ccedil;inde bulunan proteinlerdir. S&uuml;t proteinleri %78-80 oran\u0131nda v&uuml;cut proteinine d&ouml;n&uuml;\u015febilmektedir. Sindirilebilirlikleri ise %90 &lsquo; n\u0131n &uuml;zerindedir.<\/p>\n<p>\u0130nsan v&uuml;cudu proteinlerin yap\u0131ta\u015f\u0131 olan amino asitleri yapamad\u0131\u011f\u0131 gibi, amino asitleri birinden di\u011ferine &ccedil;evirebilmekte s\u0131n\u0131rl\u0131 bir yetene\u011fe sahiptir. V&uuml;cudun di\u011fer amino asitleri kullanarak yapamad\u0131\u011f\u0131 bu amino asitlerin besinlerle aynen ve gereksindi\u011fi kadar al\u0131nmas\u0131 zorunludur. S&uuml;t ve s&uuml;t &uuml;r&uuml;nlerinin elzem amino asit bile\u015fimleri v&uuml;cut gereksinmesine uygundur. S&uuml;t elzem amino asitlerden &ouml;zellikle lizin a&ccedil;\u0131s\u0131ndan zengindir. S&uuml;t ve &uuml;r&uuml;nlerinin tah\u0131l &uuml;r&uuml;nleri ile kar\u0131\u015ft\u0131r\u0131lmas\u0131 ile tah\u0131llar\u0131n elzem amino<br \/>\nasitlerindeki dengesizlik giderilebilir. Kalsiyum i&ccedil;in en iyi kaynak s&uuml;t ve &uuml;r&uuml;nleridir. Bir su barda\u011f\u0131 s&uuml;t (200 cc) 240 mg civar\u0131nda kalsiyum i&ccedil;erir. Kalsiyumu ila&ccedil; olarak almak yerine s&uuml;t, yo\u011furt olarak her &ouml;\u011f&uuml;nde almak daha iyidir . &Ouml;zellikle &ccedil;ocukluk ve gen&ccedil;likte s&uuml;t i&ccedil;imi sadece b&uuml;y&uuml;me i&ccedil;in de\u011fil, genetik s\u0131n\u0131rlar i&ccedil;inde kemik k&uuml;tlesinin en y&uuml;ksek d&uuml;zeye &ccedil;\u0131kmas\u0131, ya\u015fl\u0131l\u0131kta kemik kay\u0131plar\u0131n\u0131n en aza indirilerek kemik sa\u011fl\u0131\u011f\u0131n\u0131 korumas\u0131 i&ccedil;in de yararl\u0131d\u0131r.<\/p>\n<p>Kalsiyum kemik ve di\u015flerin yap\u0131 ta\u015f\u0131d\u0131r. Kemiklerin yap\u0131s\u0131na girerek uzamas\u0131n\u0131 ve g&uuml;&ccedil;lenmesini sa\u011flar.&nbsp;<br \/>\nKemiklerde ya\u015fla birlikte olu\u015fan kay\u0131plar\u0131 yava\u015flat\u0131r. Kalp kaslar\u0131n\u0131n kas\u0131lmas\u0131n\u0131 sa\u011flayarak kalbin atmas\u0131n\u0131, normal sinir fonksiyonlar\u0131n\u0131n devaml\u0131l\u0131\u011f\u0131n\u0131 sa\u011flar. Kanama durumlar\u0131nda kan\u0131n p\u0131ht\u0131la\u015fma i\u015flevini yerine getirir . S&uuml;tte bulunan kalsiyumun kan kolesterol d&uuml;zeyini d&uuml;\u015f&uuml;r&uuml;c&uuml; etkisi (hipokolesterolemik etki) vard\u0131r. Ayr\u0131ca kalsiyum; dokulardaki kolesterol&uuml; toplayarak d\u0131\u015far\u0131 at\u0131lmas\u0131n\u0131 sa\u011flayan HDL-kan kolesterol&uuml; sentezini art\u0131r\u0131r. Kalsiyumun hipertansiyonun &ouml;nlenmesi ve tedavisi &uuml;zerine de olumlu etkisi vard\u0131r.<br \/>\nKalsiyum gereksinimi hayat\u0131n her devresinde farkl\u0131l\u0131k g&ouml;sterir. H\u0131zl\u0131 b&uuml;y&uuml;menin oldu\u011fu devrelerde, gebelik ve emziklilik d&ouml;nemlerinde kalsiyum gereksinimi artar. Ancak her ya\u015f d&ouml;neminde yeterli miktarda kalsiyumun al\u0131m\u0131na &ouml;zen g&ouml;stermek gerekir.<\/p>\n<p><strong>&Ccedil;ocuklarda yetersiz kalsiyum al\u0131m\u0131 b&uuml;y&uuml;meyi etkileyebilir.&nbsp;<\/strong><\/p>\n<p>A\u011f\u0131r yetersizlik durumunda yeti\u015fkinlikte eri\u015febilecekleri maksimum boya ula\u015famazlar. Ya\u015fam boyunca, hafif yetersizlik durumlar\u0131nda bile kemik yo\u011funlu\u011fu etkilenebilir, kemik kay\u0131plar\u0131 olu\u015fabilir, osteoporoz riski artabilir ve kolay kemik k\u0131r\u0131klar\u0131n\u0131n g&ouml;r&uuml;ld&uuml;\u011f&uuml; hastal\u0131klar olu\u015fabilir. Yetmi\u015f ya\u015f\u0131ndaki t&uuml;m kad\u0131nlar\u0131n %30-40&rsquo;\u0131 osteoporozu g&ouml;steren en az\u0131ndan bir k\u0131r\u0131\u011fa sahiptir. S&uuml;t gibi proteinden zengin besinlerin fosfor i&ccedil;erikleri de y&uuml;ksektir. Fosfor; h&uuml;crelerde enerji &uuml;retimine yard\u0131m eder, organlardaki enerji metabolizmas\u0131n\u0131n ana d&uuml;zenleyicisidir, kalsiyumdan sonra kemik ve di\u015flerin temel bile\u015fenidir, v&uuml;cutta h&uuml;cre yenilenmesi ve &ccedil;o\u011falmas\u0131n\u0131 kontrol eden DNA ve RNA&rsquo;n\u0131n bir par&ccedil;as\u0131d\u0131r. Kalsiyum emiliminde kalsiyumun fosfora oran\u0131 (Ca:P) &ccedil;ok &ouml;nemlidir.&nbsp;<br \/>\nKalsiyumun kullan\u0131m\u0131 i&ccedil;in Ca:P oran\u0131n\u0131n 1:1 ile 1:2 aras\u0131nda olmas\u0131 &ouml;nerilmektedir. Diyette etin &ccedil;ok olmas\u0131 fosfor al\u0131m\u0131n\u0131 art\u0131r\u0131r, kalsiyum al\u0131m\u0131n\u0131 azalt\u0131r. Kalsiyum ve fosforu e\u015fit oranlarda bulunduran s&uuml;t ile, fosfora k\u0131yasla daha fazla kalsiyum i&ccedil;eren sebze ve meyvenin diyette yeterince yer almas\u0131 bu dengesizli\u011fi &ouml;nler.<\/p>\n<p>S&uuml;t ve s&uuml;t &uuml;r&uuml;nleri vitamin B2 &rsquo; nin en zengin kaynaklar\u0131d\u0131r. Vitamin B2; v&uuml;cudun b&uuml;t&uuml;n h&uuml;crelerinde enerji olu\u015fumuna ve organizmam\u0131zda triptofan amino asitinden niasin olu\u015fumuna yard\u0131m eder. T&uuml;rkiye&rsquo;de okul &ccedil;a\u011f\u0131 &ccedil;ocuklar\u0131 aras\u0131nda vitamin B2 yetersizli\u011fi &ccedil;ok yayg\u0131nd\u0131r. Marmara, \u0130&ccedil; Anadolu ve Do\u011fu Anadolu B&ouml;lgelerinde yerle\u015fim merkezi ayr\u0131m\u0131 olmaks\u0131z\u0131n 7-17 ya\u015f gurubu k\u0131z ve erkek &ccedil;ocuklar\u0131 &uuml;zerinde yap\u0131lan bir ara\u015ft\u0131rmada &uuml;&ccedil; b&ouml;lge genelinde B2 vitamini yetersizlik y&uuml;zdesi %82.9<br \/>\ngibi &ccedil;ok y&uuml;ksek oranda saptanm\u0131\u015ft\u0131r. Ara\u015ft\u0131r\u0131c\u0131lar ara\u015ft\u0131rmaya al\u0131nan &ccedil;ocuklar\u0131n yiyecek t&uuml;ketim s\u0131kl\u0131klar\u0131 incelendi\u011finde vitamin B2 i&ccedil;in en zengin kaynak olarak g&ouml;sterilen s&uuml;t ve s&uuml;t &uuml;r&uuml;nlerinin t&uuml;ketim s\u0131kl\u0131\u011f\u0131n\u0131n bir porsiyonu ge&ccedil;medi\u011fini izlemi\u015flerdir. Ayr\u0131ca riboflavin yetersizli\u011finin<br \/>\nplazma homosistein konsantrasyonu y&uuml;kselterek kardiyovask&uuml;ler hastal\u0131k riskini art\u0131rd\u0131\u011f\u0131 ileri s&uuml;r&uuml;lm&uuml;\u015ft&uuml;r.<\/p>\n<p><strong>S&uuml;t ve &uuml;r&uuml;nleri t&uuml;m v&uuml;cut h&uuml;crelerinde bulunan B12 vitamininden zengindir.&nbsp;<\/strong><\/p>\n<p>B12 vitamini k\u0131rm\u0131z\u0131 kan h&uuml;crelerinin yap\u0131m\u0131nda g&ouml;rev al\u0131r, v&uuml;cutta ya\u011f asitlerinin ve baz\u0131 amino asitlerin kullan\u0131lmas\u0131na yard\u0131m eder.<\/p>\n<p><strong>S&uuml;t ve s&uuml;t &uuml;r&uuml;nleri t&uuml;ketiminin kan bas\u0131nc\u0131n\u0131 d&uuml;\u015f&uuml;rd&uuml;\u011f&uuml; ve hipertansiyon riskini azaltt\u0131\u011f\u0131 bildirilmi\u015ftir.<\/strong><\/p>\n<p>Y&uuml;ksek kan bas\u0131nc\u0131 (hipertansiyon), en &ouml;nemli sa\u011fl\u0131k sorunlar\u0131ndan biridir. Y&uuml;ksek kan bas\u0131nc\u0131; kardiyovask&uuml;ler hastal\u0131klar, kalp krizi ve b&ouml;brek hastal\u0131klar\u0131 riskini art\u0131r\u0131r. Yap\u0131lan bir &ccedil;al\u0131\u015fmada hipertansiyonlu bireylere k\u0131yasla daha fazla s&uuml;t t&uuml;keten 5000 erke\u011fin kan bas\u0131nc\u0131. Normal s\u0131n\u0131rlar i&ccedil;erisinde bulunmu\u015ftur. S&uuml;tte bulunan peptitler (molek&uuml;l a\u011f\u0131rl\u0131\u011f\u0131 d&uuml;\u015f&uuml;k bir protein bile\u015fi\u011fi) ve &ccedil;e\u015fitli minerallerin ( kalsiyum, sodyum, potasyum, magnezyum) kan bas\u0131nc\u0131n\u0131 d&uuml;\u015f&uuml;r&uuml;c&uuml; etkisi oldu\u011fu bildirilmi\u015ftir. Hamileler &uuml;zerinde yap\u0131lan bir &ccedil;al\u0131\u015fmada s&uuml;t ve s&uuml;t &uuml;r&uuml;nleri t&uuml;ketimine ba\u011f\u0131nt\u0131l\u0131 olarak y&uuml;ksek kalsiyum al\u0131m\u0131n\u0131n hamileli\u011fin ilk 20 haftas\u0131nda gestasyonel hipertansiyon ( hamileli\u011fe ba\u011fl\u0131 y&uuml;ksek bas\u0131n&ccedil;) riskini azaltt\u0131\u011f\u0131 belirlenmi\u015ftir. Yine ya\u011fdan fakir, sebze-meyve ve s&uuml;tten zengin bir diyet t&uuml;keten 450 yeti\u015fkin &uuml;zerinde yap\u0131lan bir &ccedil;al\u0131\u015fmada 2 hafta i&ccedil;inde kan bas\u0131nc\u0131n\u0131n &ouml;nemli d&uuml;zeyde d&uuml;\u015ft&uuml;\u011f&uuml; belirlenmi\u015ftir. Sonu&ccedil; olarak; d&uuml;\u015f&uuml;k ya\u011fl\u0131, sebze ve meyveden zengin, yar\u0131m ya\u011fl\u0131 s&uuml;t ve s&uuml;t<br \/>\n&uuml;r&uuml;nlerinin t&uuml;ketimi kan bas\u0131nc\u0131n\u0131 &ouml;nemli d&uuml;zeyde d&uuml;\u015f&uuml;rmekte ve y&uuml;ksek kan bas\u0131nc\u0131 olu\u015fum riskini azaltmaktad\u0131r.<\/p>\n<p>S&uuml;tteki patojen mikroorganizmalar\u0131n vejetatif formlar\u0131n\u0131n tamam\u0131n\u0131n, di\u011fer mikroorganizmalar\u0131n b&uuml;y&uuml;k bir k\u0131sm\u0131n\u0131n say\u0131s\u0131n\u0131 indirmek ve raf &ouml;mr&uuml;n&uuml; uzatmak amac\u0131yla pastorizasyon ve UHT \u0131s\u0131l i\u015flem s&uuml;re&ccedil;leri uygulanmakta, elde edilen s&uuml;tlerin kapal\u0131 bir sistemde ve steril ko\u015fullar alt\u0131nda aseptik karton kutulara dolumu yap\u0131lmaktad\u0131r. Bu kutular\u0131n &ouml;zelli\u011fi nedeniyle de kapal\u0131 ambalajdaki s&uuml;te d\u0131\u015fardan mikroorganizma giri\u015fi olas\u0131 de\u011fildir. Bu kutular ayr\u0131ca s&uuml;t&uuml;, \u0131s\u0131 ve \u0131\u015f\u0131k ve havan\u0131n olumsuz etkilerine<br \/>\nkar\u015f\u0131 da korur. S&uuml;t&uuml;n bozulmas\u0131na neden olan bakterilerin i\u015flem sayesinde yok edilmesi ve ambalaj sayesinde d\u0131\u015fardan giri\u015finin &ouml;nlenmesi sonucunda s&uuml;t uzun &ouml;m&uuml;rl&uuml; olur. Her iki past&ouml;rize s&uuml;tte kesinlikle hi&ccedil;bir katk\u0131 maddesi yoktur.
