Bu y&uuml;zden bir ya\u015f\u0131ndan sonra bebeklere tam ya\u011fl\u0131 s&uuml;t ve &uuml;r&uuml;nlerinin kullan\u0131lmas\u0131n\u0131n bir sak\u0131ncas\u0131 yoktur.&rdquo;<\/p>\n<p align=\"left\">S&uuml;t veya di\u011fer &uuml;r&uuml;nleri i&ccedil;erdikleri ya\u011f t&uuml;r&uuml; nedeniyle beyin fonksiyonlar\u0131n\u0131z\u0131n ayn\u0131 zamanda &ouml;\u011frenmenin &ccedil;ok yo\u011fun oldu\u011fu okul &ccedil;a\u011f\u0131nda s&uuml;t ve s&uuml;t &uuml;r&uuml;nleri g&uuml;nl&uuml;k d&uuml;zenli ve yeterli miktarda t&uuml;ketilmelidir<\/p>\n<p align=\"left\">S&uuml;t ve s&uuml;t &uuml;r&uuml;nlerinin g&uuml;nl&uuml;k beslenmede d&uuml;zenli ve yeterli t&uuml;ketilmesi halinde dengeli beslenme i&ccedil;in gerekli olan besin &ouml;\u011feleri, vitamin, mineralin pek &ccedil;o\u011fu kar\u015f\u0131lan\u0131r. &Ouml;zellikle protein, kalsiyum, potasyum, B2 vitamin dedi\u011fimiz riboflavin(%65- 70), demir, D Vit, Avit&hellip;. Kemik ve di\u015flerimizin yap\u0131ta\u015f\u0131 kalsiyumun en zengin kayna\u011f\u0131 olan s&uuml;t ve &uuml;r&uuml;nleri ya\u015fam\u0131n her d&ouml;neminde ( &ouml;zellikle okul &ccedil;ocuklar\u0131, ya\u015fl\u0131lar\u0131n beslenmesinde ) d&uuml;zenli t&uuml;ketildi\u011fi zaman ileri ya\u015flarda osteoporozun ( kemi\u011fin kalsiyum yo\u011funlu\u011funun azalmas\u0131..) &ouml;nlenmesinde etkilidir. S&uuml;t ve s&uuml;t &uuml;r&uuml;nleri ayn\u0131 zamanda sindirim sistemini ve enerji dengesini d&uuml;zenleyerek kilo kontrol&uuml;n&uuml; sa\u011flar. S&uuml;t ve &uuml;r&uuml;nlerinin genel ya\u011f i&ccedil;eri\u011fi ortalama % 3.5 tur. S&uuml;t ya\u011f\u0131 fosfolipitler y&ouml;n&uuml;nden zengin oldu\u011fu i&ccedil;in bebeklerde ( 1 ya\u015f\u0131ndan sonra ve okul &ouml;ncesi d&ouml;nemdeki &ccedil;ocuklarda yeterli miktarda tam ya\u011fl\u0131 s&uuml;t ve &uuml;r&uuml;nleri kullan\u0131lmal\u0131d\u0131r. Bu ya\u015f grubunda beyin dokusunun geli\u015fmesi i&ccedil;in fosfolipitler gereklidir. Yeti\u015fkinlerde ise enerji ve ya\u011f dokusunun dengesini sa\u011flamak i&ccedil;in &ldquo;Yar\u0131m ya\u011fl\u0131 s&uuml;t ve &uuml;r&uuml;nlerinin kullan\u0131lmas\u0131 &ldquo; daha uygundur. S&uuml;t ayn\u0131 zamanda susama duygusu geli\u015fmemi\u015f olanlarda ( %87-90 sudur) v&uuml;cudun s\u0131v\u0131 gereksinimini kar\u015f\u0131lamada ve kan bas\u0131nc\u0131n\u0131 d&uuml;zenlemede iyi bir alternatiftir.<\/p>\n<p align=\"left\">S&uuml;t&uuml;n Bile\u015fimi<\/p>\n<p align=\"left\">S&uuml;t&uuml;n ortalama %87-90 su, %4,5-5 i karbonhidrat, %3.5-4&uuml; ya\u011f, %4 &uuml; protein, %0.7 si de mineraldir. S&uuml;t&uuml;n besin &ouml;\u011feleri i&ccedil;eri\u011fi hayvan\u0131n cinsine, mevsimlere ve beslenme \u015fekline g&ouml;re de\u011fi\u015fiklik g&ouml;sterir. Ayn\u0131 \u015fekilde S&uuml;t grubu besinlerin ya\u011f ve kolesterol i&ccedil;eri\u011fi de farkl\u0131l\u0131k g&ouml;sterir. S&uuml;t ya\u011f\u0131n\u0131n yakla\u015f\u0131k 2\/3 &uuml; doymu\u015f, 1\/3 &uuml; doymam\u0131\u015f ya\u011f asitlerinden olu\u015fmu\u015ftur. Ya\u011fs\u0131z s&uuml;t 0.5 veya daha az oranda ya\u011f i&ccedil;erir. S&uuml;t ve s&uuml;t ilavesi ile haz\u0131rlanan g\u0131dalarda 2 t&uuml;r karbonhidrat (\u015feker) vard\u0131r. Bunlardan birisi s&uuml;t&uuml;n do\u011fal yap\u0131s\u0131nda bulunan laktoz, di\u011feri ise s&uuml;t&uuml;n i\u015flenmesi ile elde edilen g\u0131dalara eklenen \u015fekerdir. Meyval\u0131 yo\u011furtlar, s&uuml;tler, muhallebiler ve dondurmalar &hellip;gibi..<\/p>\n<p align=\"left\">S&uuml;tte yer alan laktoz dedi\u011fimiz s&uuml;t \u015fekeri fermente s&uuml;t &uuml;r&uuml;nlerinde ( yo\u011furt, ayran, kefir gibi) laktik asite d&ouml;n&uuml;\u015f&uuml;r. Laktik asit hem ba\u011f\u0131rsak hareketlerini d&uuml;zenler hem de kasta yorgunluk yaratarak ki\u015fiyi rahatlat\u0131r. &Ouml;zellikle uykusuzluk problemi &ccedil;ekenlerin yatmadan &ouml;nce bir bardak ayran veya yo\u011furt t&uuml;ketmeleri kaliteli bir uyku i&ccedil;in iyidir.<\/p>\n<p align=\"left\">&Uuml;lkemizde &ouml;zellikle yeti\u015fkinlerde g&uuml;nl&uuml;k d&uuml;zenli ve yeterli s&uuml;t t&uuml;ketilmedi\u011fi i&ccedil;in baz\u0131 insanlarda laktoz int&ouml;lerans\u0131 geli\u015fir. Bu insanlarda birtak\u0131m sindirim sistemi \u015fikayetleri (ishal, \u015fi\u015fkinlik, gaz, haz\u0131ms\u0131zl\u0131k ve mide bulant\u0131s\u0131) g&ouml;r&uuml;lebilir. Bu insanlar g&uuml;nl&uuml;k beslenmelerine azar azar ve s\u0131k s\u0131k s&uuml;t t&uuml;ketmeye devam ederlerse zamanla \u015fik&acirc;yetleri azal\u0131r.<\/p>\n<p align=\"left\">S&uuml;t&uuml;n Mikroorganizma Yap\u0131s\u0131na Dikkat<\/p>\n<p align=\"left\">S&uuml;t yumurtada oldu\u011fu gibi i&ccedil;erdi\u011fi besin &ouml;\u011felerinden dolay\u0131 bir&ccedil;ok mikroorganizman\u0131n &uuml;remesi i&ccedil;in iyi bir besiyeri ( bile\u015fen) dir. Bu nedenle s&uuml;t&uuml;n sa\u011f\u0131ld\u0131\u011f\u0131 hayvandan ba\u015flamak &uuml;zere evlerimize gelene kadar her a\u015famada kalite ve \u0131s\u0131 kontrol&uuml; etkin bir \u015fekilde yap\u0131lmal\u0131d\u0131r. S&uuml;tteki mikroorganizma y&uuml;k&uuml;n&uuml; etkileyen fakt&ouml;rler; sa\u011f\u0131ld\u0131\u011f\u0131 hayvan\u0131n sa\u011fl\u0131\u011f\u0131, saklama \u0131s\u0131s\u0131 ve saklama ambalaj\u0131n\u0131n yap\u0131s\u0131d\u0131r. Mikrobiyal kirlenme ile s&uuml;t ve s&uuml;t &uuml;r&uuml;nleriyle( &ouml;zellikle &ccedil;i\u011f s&uuml;tten yap\u0131lan peynir &ccedil;e\u015fitleri )insanlara ge&ccedil;en hastal\u0131klar\u0131n ba\u015fl\u0131calar\u0131; , brusellosis, t&uuml;berk&uuml;loz, kuduz ve stafilokokuz streptokok enfeksiyonlard\u0131r. Bu nedenle kesinlikle &ccedil;i\u011f ve sokak s&uuml;tleri t&uuml;ketilmemeli, Past&ouml;rize ve sterilize edilmemi\u015f s&uuml;tler mutlaka kaynat\u0131lmal\u0131d\u0131r. Kaynatma s&uuml;resi &ccedil;ok uzun olursa baz\u0131 vitamin ve mineral kay\u0131plar\u0131 olu\u015fur. Bunu &ouml;nlemek i&ccedil;in s&uuml;t kaynamaya ba\u015flad\u0131ktan sonra kar\u0131\u015ft\u0131rarak 5-7 dakika yeterlidir. Ard\u0131ndan so\u011futularak stril cam \u015fi\u015fe veya kavanozlara konulup buzdolab\u0131nda saklanmal\u0131d\u0131r. En fazla 1-2 g&uuml;n i&ccedil;erisinde t&uuml;ketilmelidir.<\/p>\n<p align=\"left\">&Uuml;lkemizde past&ouml;rize s&uuml;tler 80-84&deg;C de 15-120 saniye \u0131s\u0131t\u0131l\u0131p so\u011futularak yap\u0131l\u0131r. Uzun &ouml;m&uuml;rl&uuml; s&uuml;tler 135-160&deg;C de 2-4 saniyede y&uuml;ksek \u0131s\u0131da mikroplar\u0131 &ouml;ld&uuml;r&uuml;l&uuml;r. Past&ouml;rize s&uuml;tlerin buzdolab\u0131 ko\u015fullar\u0131nda saklansa da 2 g&uuml;n i&ccedil;erisinde t&uuml;ketilmesi gerekir. UHT (Ultra High Temperature) yani uzun &ouml;m&uuml;rl&uuml; s&uuml;tler ise a&ccedil;\u0131lmad\u0131\u011f\u0131 taktirde oda s\u0131cakl\u0131\u011f\u0131nda son kullanma tarihine kadar (yakla\u015f\u0131k 6 ay) bozulmadan kalabilir.
